Hollleee shit!

I dont mean to brag...well ok I do, but I made some really good shrimp scampi w/ cream sauce the other night...and it was all from scratch!

Honestly...the shrimp scampi all by its self would have been great over pasta, but I really wanted to try to make the cream sauce since I had never made one before. And it turned out better than I would have ever thought.

Even my husband who is usually scared to try food ive made for the first time fell in love with it!



Here is the shrimp in the pan with all the goodness of wine, lemon, parsley and garlic

For Dinner tonight..

Cajun Baked Chicken with Rice and Carrots.

I usually dice chicken breast and season them with Tony Chachere's creole seasoning. Then I shallow fry them in a skillet until they are good and brown. But I decided to do things differently tonight becuase it takes forever to dice all that chicken.

So tonight I am baking them in the oven wtih the seasoning and a little water and Im going to cover it with foil for the first 45 minutes and then take the foil off for the last 15 minutes of baking.

I do something a little different ( to me) with rice. I use white rice, but instead of water I use Swanson's chicken broth. It gives the rice a nice flavor without overcoming the actual meal.

I almost always have corn with this meal..but my husband gets burnt out on corn so Im making carrots instead. Nothing fancy with the carrots. Just put them in the pot with butter and salt and bring to a boil and reduce heat.

I got this loaded potato soup recipe from a good friend of mine on facebook...and I'm pretty sure Ive made it at least twenty times in the last six months. Its loaded with calories and all that stuff that makes food good and thighs expand...so everyone should enjoy it :)

Just a little note..I'm going to post the FULL recipe..but I always cut it in half and it feeds my family for two days :)

One and a half bags of red potatoes, chopped. I prefer bigger chunks of potato, but its up to you.
One onion. I use a large white or yellow onion.
One stick of butter.
2 cans of cream of chicken soup.
1 can of Campbell's cheddar cheese soup.
*This next step can be done two ways..ill post both.
1. one 8 oz container of french onion dip
OR
2. 8 oz of sour cream and one packet of onion soup mix. I personally like the onion soup mix better.

Four soup cans full of milk. I use the cream of chicken and cheese soup cans so that i can scrape the sides really good. You can add more or less milk, depending on how "soupy" you want it to be.

Instructions:
Chop your onion into small pieces while melting the butter in a pot. Saute the onions until they are clear and put them in a crock pot. add the rest of your ingredients and stir until its all incorporated really well.
Set the crock pot to 4 hours and stir regularly.
Serve with shredded cheddar cheese and bacon bits ;)

If you are crunched for time and dont want to take four hours to cook this..you can put it in a regular pot..but MAKE sure you keep the heat at medium and stir constantly or it may burn and stick to the pan!
